Celebrating Dr. Seuss

Life is hard. There is no way around it. It just is. Which is why I need to remember to look for the little reasons to celebrate. And Dr. Seuss's birthday is just as good a reason as any. Not Green Eggs and Ham again. Maybe a stack of Pancakes like the mountian in Horton Hears a Who...
With homemade pink and purple syrup, and sprinkles that we can pretend are rocks...
After all...
What's NOT to celebrate???
(I got this idea from Cheeky Kitchen's Babble link)

Happy April!

My April Fool's stand-by joke. Clint doesn't fall for it anymore, but Derek still did. (it's Jell-O, by the way).
And the Legos were all Derek's idea

LEGOMANIACS Rule!!!!

Happy April.

Taste a Rainbow

St. Patrick's Day is not just about green, you know. Those Leprechauns always find their gold at the end of the rainbow.

And since Derek didn't go for the green eggs this year, we did the rainbow thing for dessert.

1. Prepare and refrigerate Jello.

2. Cut Jello into squares.

3. Layer in pretty glasses, with or without whipped cream...(neither Derek or Delany like whipped cream).

And Neither Derek or Delany like all the flavors of Jello, but they do all look pretty together, and they were a blast to make!

And Dad and Clint ate them. No problem there.

Cupcake Copycat

I love the book Pinkalicious I loved it the first time I read it and felt a little meloncholy that I didn't have a little girl. In fact, I bought the book for my niece who has beautiful little girls, but felt like I didn't have a right to own it for myself. Everytime I saw it, or saw a blog post about it, I felt kind of sad inside for missing out on all the little girly stuff I never get to do.

I went to the book store a few times and would pick it up off the shelf, and then put it away again, or buy it for another one of my friends with little girls. Reminding myself that our house is a Superhero Jedi Training Camp...not a girly fairy princess house. And although I really do love and am so grateful for every moment I have of safegaurding our YT-1300 Rebel Transport Ship from The Evil Republic on a daily basis...every now and then I long to have high tea and put on a pair of glass slippers and a tiara.

Derek used to go for the tea parties. Not any more.

So as the ultimate indulgence of waking up every morning and getting to the gym at 5:30 a.m. for an entire week...I went to Barnes and Nobel and bought it for myself! And the best part is... I changed the name of the little brother in the book to 'Derek'...Derek loves the story now too!

Luckly, our friend Delaney came over today, and with her help, Derek and I made cupcakes. Now, I am a copycat, because I have seen 2 other posts of pinkalicious cupcakes from Andrea, and Jamie, both absolutly adorable posts by the way. So copying is the highest form of flattery, and they both did it first. So I want to be just like ya'll!

Anyways. Derek did not go for the pink. So we changed it up a little and did Bluealicious cupcakes. We used the brown sugar cupcake recipe from the Tongue-n-Cheeky blog. One of my favorites. I don't know Brooke, the author, but I would really like to. We also used her buttercream 101 recipe for the frosting. So yummy and so delicious.

Derek frosted this one all by himself

Delaney and Derek and their Bluealicious Cupcakes!

Nice work guys!!!!

Un-Co-Operative

I have really wanted to take some cool pictures with my new camera. I am really excited about it, but neither the weather, nor my kids have been very co-operative. So I took some pictures of my Easter Cupcake Pops that I made for my PTA Board Meeting.
I love that camera. I have a lot to learn about it. The thing I love most so far is that there is absolutely NO delay. It is AWESOME!!!!

April Fools Day

Fish Sticks (Sugar Wafer cookies covered in Peanut Butter and Graham cracker crumbs) French Fries and Fry Sauce (Cinnamon rolls cut up to look like fries and icing)
Peas (Now and later candy rolled into peas) and Ketchup for fries (Jam)

Derek was disappointed that the fries were not real

Clint wasn't fooled a bit.

** 12 mega pixels with 0 second delay! I love my Camera!!!

To make Taffy:

2 Cups light corn syrup--2 Cups sugar--2/3 Cup Water--1/4 t. salt--Flavored Extracts--Food Coloring (Optional)
We used Vanilla Extract, and no food coloring.

1. Butter a Cookie Sheet

2. Combine ingredients in saucepan and boil on medium heat to 250 degrees F on a candy Thermometer, or until a drop of the candy gets hard instantly in a cup of room temperature water.

3. Pour mixture into a buttered pan until it is cool enough to handle.

4. Butter your hands, and start pulling the Taffy. Pull until it is a shiny color. The more you pull it, the better it will taste.

5. Roll it out and cut into bite size pieces.

6. Wrap with wax paper.

We had a lot of fun making it, but it was really hard. Too hard. I was worried that it was going to ruin Clint's dental work, so we threw it out. But it was fun to make. I am now on the lookout for a better recipe where the Taffy is not so hard. It was tasty, though. I guess you could just suck on it....

Clint's Spaghetti Tacos....(I know, right?) :(

Clint wanted to try a new recipe that he saw on TV... Spaghetti Tacos...
He says there good...I say they are full of carbs...I havn't tried them yet. Maybe I will next time???

Did I mention that the recipe was from a crazy kid's show...And I think on the show it was some kind of dare, or something?

Conference Cupcakes...

We thought these cupcakes would be fun to make between sessions...we found the idea in a book...
They did turn out really good, but they took foreverrrrrrrrr!
Derek didn't even feel the slightest bit guilty eating their cute little faces.
We took the rest to out neighbors. It's best for me to have them out of the house.
